The grapes for this Cabernet Sauvignon were hand selected to ensure optimal ripeness and flavour potential. Following destalking, the grapes were cooled for 24 hours before fermentation. This red wine was fermented in open tanks, giving it the perfect balance between tannins, flavours and colour. Aging in French oak barrels for 12 - 18 months results in an elegant wine with excellent maturation potential. |

The 2008 Cabernet Sauvignon was harvested at 25.5 balling to ensure optimal ripeness. Fermentation took place at 25*C to bring out the best of flavours. The strong but comfortable tannins and great acidity makes this wine a keeper. A minimum of two years is recommended to bring out the best of this wine. This wine won the class for Cabernet Sauvignon at the regional Young Wine Show in 2008. |

As for all our wines, the grapes for the Shiraz 2006 were hand selected to ensure optimal ripeness and flavours. The grapes were destalked and cooled down for 24 hours before fermentation. We ferment our red wines in open-tanks to give the wine the perfect balance between tannins, flavours and colour. This wine were aged for 12 months in a combination of 2/3 French oak and 1/3 American oak Barrels which leads to total elegance with a bit of dominant aromas. |

The Shiraz grapes ripened four days earlier than suspected at 24.8 balling due to a warm February in 2008. This wine is all about pleasure. Store it and it will age well and become more and more elegant, Open it now and you will find spicy, chocolate and ripe berry aromas together with comfortable tannins in one bottle. Robertson is known for its great Shiraz over the years. This wine is a great example of it. |
